With a focus on sustainability and minimalising food waste, expect to sample dishes such as oysters with bread and butter pickle mignonette, or burrata, radicchio, grilled grapes, pine nuts and balsamic to start. For a memorable main, think steak marsala, pepper and crispy leek, with sides of potatoes and red gum smoked salt and seasonal charred greens; or snapper, green herb and carrot sauce, tarator and parsley, finishing decadently with Basque cheesecake.
